Yesterday I decided to get a little creative at dinnertime and made Pomegranate Cornish Hens. My boys and I all found them to be delicious so I decided to share the recipe on the blog today with you. - Pomegranate Juice
- Cayenne Pepper
- Jerk Seasoning
- 2 Cornish Hens
Preheat your oven to 375
Wash and season the hens. Make sure you season them both inside and out. The only thing that you don’t use from the ingredients when seasoning them is the Pomegranate Juice.
Put the hens in the pan and bake them for an hour (or until done). You can tell when the hens are done by sticking a fork in the fattiest part of them and seeing only clear juice run out.
Get a bowl, put some pomegranate juice in it (you can add in additional items for seasoning if you like), and brush it on the hens periodically while they cook. I did it five times to insure the hens wouldn’t dry out since I wasn’t using butter. Also, be sure to turn the hens over at least once while they are cooking.
Once done add more pomegranate juice on them before serving and put back in the oven on 400 to brown the hens. This only takes 5-10 minutes. (if you desire).
