Have you ever had one of those days when you want to cook, but you also haven’t gone grocery shopping yet?
Yesterday was one of those days for me. The kids were out of school for a teacher’s workday or something, which meant there was limited time for me to work. Therefore, I felt the urge to cook something, but my groceries weren’t scheduled to be picked up from Walmart Grocery until the evening. So, after looking through my fridge and cabinets I was able to throw something together in the crockpot and it turned out amazing so I figured I would share it with you today.
Pomegranate & Honey Crockpot Chicken Thighs
Before I get started, I will say that for some stuff you may want to just season to your taste as while the chicken thighs were good, the kids found them to be a little spicy.
- Pomegranate Juice
- Chicken Thighs
- Cayenne Pepper
- Lemon & Pepper Seasoning
- Garlic Powder
- 2 Potatoes
- A few cups of Baby Carrots
What to Do
Cut up potatoes
Wash chicken thighs
Season each of the chicken thighs individually with cayenne pepper, salt, pepper, lemon & pepper seasoning, garlic powder, paprika, and honey to ensure they are seasoned equally (I stacked them on top of each other in a bowl and put the honey on the tops of them so it wouldn’t make such a mess, but each piece also had honey on the top and bottom).
Put the chicken in the bottom of the crockpot
Add the potatoes and baby carrots on top of the chicken
Pour in the pomegranate juice and cook on low for 5 hours or until done.

Closing Thoughts on Pomegranate & Honey Crockpot Chicken Thighs
Overall, the meal turned out awesome and my oldest son was even asking for seconds. It’s a meal I would recommend whenever you just want the food to sit back and cook by itself with minimum prep time. The only thing I would do differently next time would be to use red potatoes instead of the russet potatoes that I already had in my cabinet.
