I am doing a two-week fitness challenge to help me get back in the routine of working out daily and part of the challenge includes eating healthy, drinking lots of water, and lots of green tea. Therefore, this weekend when I did groceries, I decided to incorporate more veggies into my diet and my first meal to make was a healthy spinach bake.
Eating healthy can be expensive and usually, children don’t want to eat healthy if the meal comes off as obviously healthy. Therefore, I decided to spruce up spinach while allowing me to eat healthily but also making a fun meal for the boys. They loved it and everyone wanted seconds, so I figured I would share the recipe with you today. It’s not only healthy, but the ingredients are affordable, which allows you to stay within your food budget and it’s even super easy to make.
- Olive Oil
- 8 cups of fresh bag spinach
- 8 eggs
- 16 ounces of penne
- Shredded Cheese (or your favorite cheese)
How to Make the Healthy Spinach Bake
Preheat your oven to 375
Put olive oil at the bottom of your glass dish
Heat some olive oil in a frying pan
Beat 8 eggs
Boil the penne for about 5-6 minutes
Cook the spinach in the frying pan for a couple of minutes
Put a layer of spinach in the casserole dish
Put the penne over the spinach
Put the eggs over the penne
Put the cheese over the eggs
Put more spinach over the eggs
Put a thin layer of cheese over the spinach
Put the bake inside the oven for about 45 minutes (or until done)
