Cheesy Spinach Bake Recipe

This Cheesy Spinach Bake recipe is a huge hit in my house. 

I love making it because it lasts for about two nights and it’s one of those meals that I can throw in the oven when I take a work break and it’ll be coming out of the oven as the kids are walking through the door from school. 

The best thing is it’s under 500 calories so I don’t have to worry about a portion getting in the way with my weight loss journey.

Cheesy Spinach Bake Ingredients 

This recipe is for 10 servings. So, if you need more or less food adjust as needed. 

Cheesy Spinach Bake

  • 1 tablespoon of Olive Oil 
  • 5 Spinach Packs 
  • 8 Eggs
  • 1 box of Penne
  • 1 small bag of shredded cheese

Instructions

Preheat oven to 425.

Boil penne for 10 minutes.

Use 1 tablespoon of olive oil for the bottom of a glass dish. 

Beat 8 eggs.

Microwave spinach for 10 minutes. 

Layer in the ingredients as follows: a layer of spinach, penne, eggs, cheese, spinach, and cheese.

Bake in the oven for 45 minutes (or until done).
