At the start of the year, I decided to start eating more healthier and over this past couple of months I have really gotten serious about it and eliminated all fried foods from my diet. OMG, this is something I never thought I would be able to do because I have such a weak spot for fried chicken. However, this has caused me to get more creative with what I cook, which has meant me making things such as steamed shrimp and spinach bake.
Now, over the weekend I created a new spinach recipe – Spinach & Shrimp Casserole – and today I’m sharing the recipe with you in case you want to try it for yourself.
Ingredients
- 3 bags of spinach
- 2 bags of small shrimp
- Sharp cheddar cheese (add as much as you like)
- 1 cup of milk
- Butter or olive oil
- 8 eggs
Cleaning Supplies
- Your favorite dish detergent (I used Palmolive)
- Scotch-Brite® Heavy Duty Scrub Dots Sponge or Scotch-Brite® Non-Scratch Scrub Dots Sponge
- Scotch-Brite® Non-Scratch Scrub Dots Dishwand or Scotch-Brite® Heavy Duty Scrub Dots Dishwand

Instructions
Preheat oven to 375
Put olive oil in the bottom of your casserole dish
Put a layer of spinach and shrimp in the dish
Pour over eggs, milk, and cheese (it’s okay to mix it together in a bowl first or just add in separately)
Add more spinach, shrimp, and cheese
Put in oven for 1 hour and 30 minutes or until firm
Take out and enjoy
Cleanup Instructions
After your casserole has been eaten (in my case the next day), it’s time to clean your dish. As you can see from my photo, the dish gets dirty since the eggs run through the layers to hold everything together. However, with Scotch-Brite® Scrub Dots on your side cleanup is quick and effortless.
The first thing you want to do is set up the Scotch-Brite® Non-Scratch Scrub Dots Dishwand or Scotch-Brite® Heavy Duty Scrub Dots Dishwand. I used the Scotch-Brite® Heavy Duty Scrub Dots Dishwand.
To get it up all you must do is unscrew the cap at the end of the Scotch-Brite® Heavy Duty Scrub Dots Dishwand and pour in your favorite dish detergent. In my case, I was using Palmolive.
Once this is set up, you want to rinse and pull out any large chunks of food and put it down the garbage disposal. Then, you want to start scrubbing your dish with the Scotch-Brite® Heavy Duty Scrub Dots Dishwand. I found the Scotch-Brite® Heavy Duty Scrub Dots Dishwand to be the best one for this dish since it is great when it comes to eliminating baked-on messes. Additionally, it scrubs fast and it rinses clean – you don’t have to throw it away after one use!
After you’ve scrubbed away the stubborn spots with the Scotch-Brite® Heavy Duty Scrub Dots Sponge then it’s time to pull out your Scotch-Brite® Heavy Duty Scrub Dots Sponge. This is also great for eliminated baked on messes that you couldn’t get with the Scotch-Brite® Heavy Duty Scrub Dots Dishwand, rinses clean, and is very powerful.
Then, after using the Scotch-Brite® Heavy Duty Scrub Dots Sponge I went back over the dish once more quickly with the Scotch-Brite® Heavy Duty Scrub Dots Dishwand. When you press the white button, it releases your dish detergent so you can thoroughly wash your dish and then rinse it as sparkling clean as before you cooked your meal.
The best part is with these products you can have the dish cleaned in less than 5 minutes!
Final Thoughts on the Spinach & Shrimp Casserole Recipe
When I first started making this, I had no clue how it was going to turn out. I took the basic instructions from my Healthy Spinach Bake recipe and decided to add in a few additional ingredients. I was so unsure if this was going to be a hit that I purchased extra ingredients in case it didn’t work out the first time, but thankfully, it did because this means more steamed shrimp for me later in the week.
